10 minute prep dinner for under 10 dollars | By Stacey Burt

School is back in session & even though the days are a lot easier, like most parents we are getting into that really busy evening system when they get home.

If you’re a parent you know just how taxing it can be after they get out of school. Homework, chores, dance classes or whatever your kids do,  bath time. Ugh! Half the time you just wanna order pizza & call it a night.

This super easy recipe is something I came up with a few years back & wanted to share with you all. I can prep this at any time in less than 10 minutes, the best part is it cost’s less than $10 and can certainly feed a family of 4, even doubling this recipe would only cost about $13.00-15.00.

The recipe

 Chicken taco rice bake:

Set the oven temp 375 degrees, if baking now

 1 package boneless skinless chicken breasts     ($5.13 + tax at IGA)

 1 cup black beans (optional) $1.50

 1 package Lipton taco rice ( usually $1.00 + tax)

 Add 2 cups water & stir well

Cover with foil

Bake for 30-35 minutes

remove foil & bake for an additional 10-15 minutes

 

Honestly that’s all you need is 2 ingredients really if you don’t want to spend more than $8.00. I love cheese on everything so I always add cheese! You can get the pre-cut chicken breast tenders but I like to cut my own  because stores give you more for your $$ when you buy the bigger ones. I like this recipe because it requires no watching or stirring so I can help my kids prep with homework while it cooks. You can jazz this recipe up with anything, crunch some chips on top when before you put it back in for the 10-15 minutes if you wish & I think this recipe is very versatile for parties, dinner , next day lunch just add some soft taco shells and make a chicken rice burritos, plus my kids & my husband love it.  You can use pretty much any of Lipton’s rice with chicken for different tastes, my other favorite to use is the cheddar broccoli rice & chicken breasts. Everyone knows I love cheddar broccoli rice, yum!
